A quinoa-corn pasta, makes for a pretty bowl of pasta with its bright yellow noodles. Mixed with roasted tomatoes and herbs, this simple meal is both eye-catching and mouth-watering. A healthy gluten-free pasta dish, this recipe is quick & packs a kick with roasted herbs.
Parmesan Pasta with Roasted Tomatoes & Herbs

Ingredients
-box of quinoa-corn pasta
-box of cherry tomatoes
-2 cloves garlic
-parsley/ herbs
-grated parmesan cheese
-olive oil, salt & pepper
1. Boil pasta. I used rotini.
2. While pasta is boiling, toss sliced cherry tomatoes, 2 diced cloves of garlic, olive oil, parsley, salt & pepper in a bowl.
3. Roast tomatoes for 5 min.
4. Drain pasta, mix with roasted tomatoes and sprinkle on copious amounts of parmesan.
I actually prefer quinoa pasta to whole grain pasta, because the flavor of the pasta is less pronounced so you don't get that bitter "whole grain" pasta taste. Eating quinoa pasta tastes like refined, not-good-for-you pasta, but unlike a regular grain (it's actually a seed), quinoa contains every essential amino acid your body needs, making this a super nutritious dish!
