With the warm weather approaching, the deliciously aromatic smell of grilled food starts to fill the air.
It's almost summertime. In my anticipation of summer, I'm starting to crave grilled veggies, colorful and varied. Carmelized onions, tender mushrooms, sweet charred bell peppers, the whole shebang.
Here's one lovely (and healthy!) salad.
Ingredients:
Red & Yellow Bellpeppers
Sliced white mushrooms
Splash of vinegar
Spinach
Heirloom lettuce
Vinaigrette
Pepper
Directions:
In a saucepan over high heat, sautee musrooms and bellpeppers until golden brown, adding a splash of vinegar to bring out flavor.
Quickly transfer into a bed of crisp greens. Pepper and add vinaigrette as needed.
The heat from the grilled veggies will add a whole new dimension to the salad. A perfect summer salad.
