A 1960's Classic Dinner

This classic dish of grilled chicken, bread, and comforting greens reminds me of a dinner that would have been served at 6' o' clock in another era. Besides being healthy and wholesome, this classic meal has remained in the proverbial American cookbook for its home-cooked simplicity. A perfect meal that can transport you back to the 1960s. Sit back, relax, and enjoy.

When I stopped by Whole Foods today, I picked up fresh chicken breasts and a loaf of their "Seeduction" bread-- a hearty, whole-grain bread boasting pumpkin, poppy, and sunflower seeds. The grilled chicken was easy to prepare, a little bit of pepper and olive oil, and some sizzling in a pan. I had kale marinating in the fridge in some red wine-olive oil dressing, and a bunch of carrots, so those were steamed in unison. The steaming really brought out amazing flavor-- the sweet from the carrots and the vinegar from the marinated kale. Bread, chicken, and greens. This dish came together in perfect symphony.


Ingredients for a 1960's Dinner
-Two small chicken breasts (pounded)
-Pepper
-Olive oil
-Kale (marinated in dressing overnight for more flavor)
-2 Carrots
-"Seeduction" bread from Whole Foods (or any type of bread)


Directions
-Heat small pan with olive oil
-Pepper and grill chicken until cooked through
-While chicken is cooking chop carrots
-Steam carrots and kale
-Butter bread (if desirable)
-Arrange meat, vegetables, and bread (aesthetically)
-Enjoy, slowly.
